Delish Jello Cookies



I was on Pinterest a few weeks ago and found these jello cookies. I loved the fun colors and thought that they were very summerish!! We made them yesterday and they are AWESOME!!!!!!!! The jello makes them cool colors but if you want more vibrant colors like the ones in the picture add food coloring. We only made blue raspberry and lime but I suggest those if you make them. The recipe calls for you to divide the batter into fourths for 4 different colors and flavors. But if you only make 2 colors and flavors like we did just divide the dough in half. You can do any flavor Jello but I do not suggest doing black raspberry just because of the dark color. Our cookies were pastels. One more thing is that the recipe says it makes 2 dozen. We didn't double it but i think we just made the dough balls smaller than we were supposed to because we got 4 dozen. So it depends on the size of your dough balls of how many cookies you get. I think ours are good sizes for cookies but you make however you want. One last thing is when you smash the dough balls i suggest using a bowl or a cup like it says to. We made half that way and half like peanut butter cookies with a fork. I know this shouldn't be true but the ones smashed by a bowl or a cup were better. I can't explain it but just do it!!

Jello cookies
Yield: 2 dozen
Prep: 20 mins
Cook: 10 mins
Ready In: 30 mins
ingredients
3.5 cups flour
1 tsp baking powder
1.5 cups salted butter softened
1 cup sugar
1 egg
1 tsp vanilla
4 (3 oz) pkg jello You can use any flavors you want
instructions
  1. Beat butter in large bowl with mixer until creamy. Add sugar and beat until light and fluffy. Blend in egg and vanilla. Mix flour and baking powder in a separate bowl. Gradually beat in flour mixture.
  2. Divide dough into 4 sections. Sprinkle 2 Tb of jello onto each section. Knead together with dough. You may want to add a few drops of food coloring to make the dough more vibrant. 
  3. Shape dough into 1-inch balls. Roll in the extra jello from the packets. Place, 2 inches apart, on baking sheets. Flatten with bottom of bowl. 
  4. Bake 8 to 10 min at 350 on lined baking sheets. Cool on baking sheets 2 min. Remove to wire racks and cool completely.
